Katrina’s Best…I think not…

Alright, so I was craving chocolate again (what is it with me!) and I was like, “well, last time went so well, I should bake some brownies”. But, there was no chocolate syrup left. “Oh well, the entire world makes brownies with cocoa powder, let me try”….bad idea.

So the recipe said they were Katrina’s (don’t ask me who she is) best brownies ever…or something like that. Feeling a little confident, I went through the reviews and recipe. Some people had said that their brownies had come out too oily, but that they might have made a mistake. “Pshh…I don’t make mistakes,” I thought. This one guy had gone so far as to say that everyone should ignore the negative comments, “they’re there for a reason buddy!!”.

Anyway, seemed like a simple enough recipe. I obviously halved it but even then I didn’t have enough butter/margarine. I went and checked on the internet and a lot of people had said I could replace margarine with vegetable oil, so I figured, alright, I’ll do that. Ooops.

What ensued was messy. I knew from the minute I mixed everything together that I had done something really stupid (or the recipe was completely wrong). I went back, went over the math, I’d halved everything down right, which meant that the problem had to be in the margarine/oil mixture, which was weird since they’re essentially the same thing.

Anyway, after baking, I ended up with what looks like little chocolate squares with sugar showing. Not appetizing…you can taste the oil a mile away. I actually sponged some of the oil off the mixture (about half what I put in) because it just wouldn’t mix in!

I’m not going to add the recipe here. Not worth my time. I shall try it one more time, with the right ingredients and the right proportions, and if they still turn out wrong I will give Katrina a review she won’t forget easily.

Oh…chocolate syrup brownies…I miss you so 😦

Chocolate Syrup Brownies

Haha, so I’ve officially gone off the deep end. I really wanted to eat brownies last night (don’t ask me why) and I went through my collection of recipes (yes, I have a collection, I actually now need a software to organize them) and came across chocolate brownies that need to be made with syrup. As luck would have it, there was Hershey’s chocolate syrup in the fridge (actually, I chose the recipe coz I knew we had syrup).

Anyhoo, the recipe is ridiculously simple and I didn’t go through the trouble of making any frosting. Also, I made half the recipe since I didn’t have a lot of syrup plus I knew I’d end up eating them all.

Chocolate Syrup Brownies
Serves – 30, I think

For Brownies:
– 1/2 cup butter
– 1 cup sugar
– 4 eggs
– 16 ounces of chocolate syrup (Hershey’s is best)
– 1 tsp vanilla extract (I didn’t have this)
– 1 1/8 cups flour (took me a while to figure out what half of this would be. I used 9 tbsp)
– 1/2 cup walnuts, chopped (didn’t have this)

For Frosting:
1/3 cup evaporated milk
1/4 cup butter
1.5 cup sugar
1/2 cup chocolate chips
1/2 walnuts, chopped

Alright, so basically I just made the brownies (sans vanilla extract and walnuts, which I don’t like in brownies anyway) and they were freaking delicious (I think I said this before about the pancakes too, but these were better). Like, it’s 24 hours later, and they’re all gone!! They were moist and chocolate-y and yummy!!

I got the recipe from (originally) which is kinda like the coolest recipe website out there. And I don’t have a picture, but imagine your favorite brownies, but like 10 times more appealing!!

These are seriously the best brownies I have EVER had, like EVER! Like, I’m going out right now to get another bottle of syrup to make them again! Ok…I’m not…I have a lot of weight to lose, so obviously I’m not going to do that, but I can’t WAIT to make these again. When Api comes, in June, for the kids. Great excuse 🙂

German Pancakes

A couple days back I was really really craving pancakes, and since my recipe for pancakes takes two days to make (oats+buttermilk) I was scouring the web for recipes that I could try out. That’s when I discovered German Pancakes.

Alright, so I made half the recipe (it’s a two serving recipe) and these are ridiculously easy to make. Also, it is really fun watching the pancake get all crumpled in the pan while its baking.

German Pancakes (2 servings)

312125151_8c7a8d42c64 eggs
1 tbsp sugar
1/2 tsp salt
2/3 cup flour, sifted
2/3 cup milk
2 tbsp butter (soft)

– Heat oven to 400°F. (I didn’t. Our oven has this one maximum heat it goes to, I think it’s like 300 or something)
– Butter the cake pans (around 9-inch ones)
– Mix everything (the recipe actually asks to use a blender, but I don’t know what that looks like so I went ahead and used a fork. Just make sure you get it all mixed properly)
– Pour mixture into cake pans, bake 20 minutes
– Reduce heat to 350, then bake another 10 minutes (didn’t do this step either, it looked cooked to me)

I put maple syrup on top, but you can use fresh fruit and what not. Amazingly simple and so freaking delicious. I wish I’d discovered these while living in Karachi, I could’ve had more pancakes.

Oh, and this is super heavy on calories. I think one pancake has like 500. Good luck with the treadmill after 🙂

MHT = Must Have These

First up in line are these absolutely beautiful Louboutin’s. I don’t know why I like them, but they are so pwetty. Of course, they cost, like $800, so I will have to starve the rest of the year to afford them (by which time they will probably be out of stock, and out of fashion)

And second, more Louboutin’s (the spring collection ‘09). So fierce!!

BGX0BGU_mtThere’s more on the wish list, shall update soon.  Must go procrastinate some more.

I don’t know if I mentioned it, but when I got the cats (and at that point, there was only ever the plan to get ONE cat!), my mom was all, “That cat better stay in your room”, “I can’t believe you’re getting a cat”, “Where are you going to keep it”, “My grandchildren are scared of cats”…yadda yadda yadda.

Then I went and got two cats. LOL. What a coup. I remember my dad and I went to pick the “cat” up, and I just brought home two instead. My dad being all cool and shit, was just laughing as my mom completely exploded at me.

Anyway, I still remember her being all mean and cold to my kittens, and I was like, “she’s so never going to accept them”, “I can never travel now since I can’t leave them with her”…

How things have changed…

A couple of days ago, I was working in my room, and my mom was taking an afternoon nap. I hear this very soft, “Tyler, Tyler”, coming from her room, so thinking that the stupid cat had woken her up, I rushed to her room, expecting to have to rescue it from her wrath. Instead, I find her whispering to it in the most loving of tones. The I noticed he had her makeup brush in his mouth and was trying to drag it off, so I tried to take it away only to be told “leave him alone and let him play”.

Really…how things have changed. LOL
